Molasses
candy known as la tire was first made between 1600 and 1700. Lately, la
tire has become less common in French Canada. Each year on the day
of la fête de la Ste-Catherine, November 25th, la tire
is still made by many children. It is made from taffy, although hundreds
of years ago it was made from molasses and maple sugar. The recipe containing
molasses is frequently used in Quebec. La tire blanche, which is
made without molasses, is also made quite often. On the day of la fête
de la Ste-Catherine, an unmarried woman is chosen and is the centre
of attention at a dance.
